I feel like one of the best things about eating a plant based diet is that it can never really taste bad? 😂 My meals off pictures/camera usually consists of me throwing left overs all into a bowl and mixing it up but I’ve never had to toss it because it was so inedible 🙆🏻♀️ This was some left over pasta, chickpeas, cucumbers, tomatoes and olives tossed in my home made cheese sauce (that goes with everything!!) and then topped with guac. Fresh, simple, tasty & took like 5 minutes to put together which is perf so I have more time to do work!! #winning .

Woke up to snow this morning!! ❄️ so obv I made a mini fort and tucked into some hot warm creamy oatmeal 🥣 🙆🏻 Just kidding duty calls and I was out of the house at 7 am in the dark, got splashed by a car and heavily snowed on but that would have been my ideal morning 😂 A girl can dream right?? But I did have oatmeal, and it did warm my soul so I guess i fulfilled half my dreams 🌚 Hope you’re all keepin’ yourself warm and have a fun time weekend ahead of you!! .
PS I have def been on team crunchy peanut butter as of late.. you a team chunky or team smooth??? 👀
It’s Soup Season y’all 🥣🙆🏻♀️ I love just getting under my blankets and cozying it up with a bowl of delicious creamy soup- one of my ultimate FAV comforting soup is Spicy Coconut Thai soup!! Lemongrass, ginger, herbs and all the hearty goods 😌 wrapping up my last two assignments and then I’ll be testing some new soup recipes! What’s your go to soup for the chilly season? 🥶
Another day another apple post cause apple season is slowly going down so I’ve been appreciating the last of ~in season~ apples. 🍎 🍏 Whats your fav way of eating apples? Mine is 100% dipped in nut butter or made as a crumble!! Whipped this apple crumble up on a whim with the dude and it turned out so gooooooddd which BY THE WAYYYYY you can watch us taste test it in the new video that just went up ft. what else my boyfriend eats in a day :) .
4 Apples, chopped (we used 2 cortland and 3 empire)
2 tsp cinnamon
1 tbsp lemon juice
1 tbsp sugar
1.5 c quick or rolled oats
1/4 c + 2 tbsp maple syrup
2 tbsp solid vegan butter/coconut oil or nut butter
Preheat oven to 350
Chop apples, toss with 1 tsp cinnamon, lemon juice and sugar and transfer to baking dish
Mix the oats, maple syrup, 1 tsp cinnamon and vegan butter until mixed evenly and crumble over top the apples
Place into oven for 45 minutes
Serve with cocowhip and/or vanilla ice cream!!! .
