Kickin’ off this week with yet again…. another 'yogurt bowl' using the *BEST* chocolate tasting protein by @amazinggrass_canada / @amazinggrass! Mixing protein powder into yogurt (in my case tofu) makes a thick consistency almost like greek yogurt with I tend to prefer and then top that off with some easy peanut butter rawnola or granola- so key. Also added in a bit of ginger for a kick! Chocolate + ginger is a pretty dang good combo in my book 😛

Kickin’ off another busy weekday with VANILLA QUINOA OVERNIGHT OATS to keep fuelled and energized 😎I have been incorporating quinoa more into my diet because
1. they tasty & versatile
2. one of very few plant based foods with a complete protein profile (hello 9 amino acids)
perefect for meal prep & to have on hand
faster & easier to cook up (IMO)
I love regular overnight oats but if you want to switch it up time to time try using quinoa!
1/2 c cooked quinoa
1/4-1/3 c rolled oats (depending on how hangry you are in the mornings)
1 c almond milk
1 tbsp maple syrup
1/2 tsp vanilla
1 heaping tbsp of chia seeds
Combine everything into a air tight container and store it in the fridge overnight. You can make a week’s worth in the beginning the week and top it off with whatever you’re feeling in the morning! I went with blubs, nectarines and peanut butter today 😋

Whenever I have a bunch of random veggies in the fridge that needs to be used I just sauté them up with some salt and pepper, maybe a little soy sauce if I’m feelin’ a little crazy. I also like to bake some chopped potatoes and chickpeas seasoned with whatever I’m feelin (this day was garlic powder, smoked paprika and nutritional yeast)- and then I throw everything together into a bowl for a easy quick meal 😁🤟🏻 you can even wrap this up in some
Lettuce leaves or tortilla wraps to change up! What’s your favourite way to use left over produce? 👀
Haven’t had cooked oats in SO LONG but while ~testing~ a stove top granola/crumble recipe, I some how also whipped up toasted cooked oats… and IT’S A GAME CHANGER. Think caramelly-vanilla popcorn… oat form thats chewy but still creamy! If you’re looking to change up your oat bowls & wanna try it out…. here ya go:
1 c rolled thick oats (I like @bobsredmill, gf if needed)
1 c coconut milk or macadamia milk (creamier milk = creamier oats!!)
2 tbsp maple syrup
splash of vanilla
pinch of pink himalayan salt .
Toast the oats over a pan on medium heat, just until you start smelling something like popped popcorn. Then add in your plant milk, sweetener, vanilla and salt and cook it up until everything is absorbed into the oats. Turn off the heat when theres no more liquid, and let it sit for another 5 minutes while you gather your toppings!! .
