This Vegan Parmesan is cheesy & delicious! It’s completely nut free & only 4 ingredients. Perfect for any dish that requires parmesan cheese.
Parmesan was probably the only cheese I ever enjoyed as a kid. The smell of home made spaghetti with parmesan just reminds me of home. I know there are tons of recipes for vegan parmesan out there, but most require nuts, so I wanted to make a nut free alternative. Cashews are so versatile.. like chickpeas! And I had bought some roasted chickpeas in bulk so did a little substitution and it worked out perfectly.
You only need 4 simple ingredients for this vegan parmesan and takes only a couple pulses in the food processor to put together. If you have a nut allergy, definitely try this version of vegan parmesan out! My testers agreed its very comparable to cashew/nut based vegan parmesan.

Tips and Tricks to making Nut Free Vegan Parmesan Cheese
If you enjoy a less fine parmesan, pulse the roasted chickpeas a few times before adding in the rest of the ingredients
I’ve tried this with other roasted beans such as fava beans and they turn out very similar

1/2 c roasted chickpeas
2 tbsp nutritional yeast
1/2 tsp mustard
1/2 tsp garlic powder
1/2 tsp salt (if unsalted)
Add everything into a food processor and pulse until parmesan-like texture
